Why We Roast Twice a Week — and What It Means for Your Cup.

There's a moment, right after a fresh roast, where coffee is at its absolute peak. The oils are vibrant, the aromatics are alive, and the flavour is everything the farmer and the roaster worked so hard to achieve. Most people never taste coffee at that moment. We think that's worth changing.

The Problem with Pre-Roasted Coffee

Walk into any supermarket and you'll find bags of coffee with a "best before" date months away. What that label doesn't tell you is when it was actually roasted — and that's the number that matters.

Coffee begins to stale almost immediately after roasting. Within weeks, the complex flavours that make specialty coffee worth drinking start to fade. By the time a pre-roasted bag travels from a large facility, sits in a warehouse, gets shipped to a retailer, and lands on a shelf, you could be drinking coffee that's already weeks or months old.

That's not a knock on anyone — it's just the reality of mass production and long supply chains.

What Roasting Twice a Week Means at Tableland

At Tableland Coffee, we do things differently. We roast and blend twice a week — every Wednesday and Saturday — in small batches from our roastery in the Southern Tablelands of NSW. Every bag we send out is roasted fresh that week, not weeks or months ago.

As orders come in, we pack them ready to go. That means your coffee is never sitting on a shelf waiting — it's moving from roaster to your door as quickly as possible, with the freshness to prove it.

What You'll Notice in the Cup

Fresh coffee tastes different — but there's a nuance worth knowing. Right after roasting, coffee actually needs a little time to rest. During roasting, CO₂ builds up inside the bean, and if you brew too soon, that gas can interfere with extraction and mute the flavours.

At Tableland, we let our coffee degas for a few days after roasting before it goes out the door. That resting period is where the magic happens — the flavours settle, the aromatics open up, and the coffee reaches its sweet spot. By the time it arrives at your door, it's ready to brew at its absolute best.

You'll notice brighter, more defined flavours. A cleaner finish. More complexity in the aroma. Whether you're pulling an espresso or brewing a slow pour-over, properly rested fresh coffee rewards the process in a way that stale coffee simply can't.

Our single-origin coffees in particular shine when they're fresh. The nuances that make each origin unique — the terroir, the processing method, the varietal — are most vivid in the days and weeks after roasting.

How It Works When You Order

  1. Choose your coffee — single origin, our Signature Blend, or a bundle
  2. Select your grind size (or whole bean if you grind at home)
  3. We roast every Wednesday and Saturday — your order is packed fresh that week
  4. We let it rest for a few days so it's at peak flavour when it arrives
  5. Your coffee arrives within 2–5 business days, ready to brew
